All of the outer fat is carefully removed, it is introduced into a drum with salt and natural spices where it is left to macerate for some days to obtain the same flavour in any part of the piece. Once stuffed it is subjected to a long slow drying process.
It is a highly valued sausage given its exquisite flavour.
